SEABASS ROLL IN TURKISH COFFEE MILK FOAM, CRISP VEGETABLES, AND TROPICAL FRUIT SALAD SAUTEED WITH BASIL ANDTURKISH COFFEE

Ingredients:

  • 1 sea bass fillet
  • Carrots: 100 gr.
  • Zucchini squash: 100 gr.
  • Fresh beans: 100 gr.
  • Yellow and red bell peppers: 200 gr.
  • Soya sprouts: 50 gr.
  • Pineapple: 75 gr.
  • Mango: 75 gr.
  • Fresh basil :1/4 bunch
  • Salt: 3 gr.
  • Black pepper: 2 gr.
  • Olive oil: 5 cl.
  • Turkish coffee: 10 gr.
  • Milk: 10 cl.

Preparation:

Form the skinned sea bass fillet into a roll. Place it in a marinade of olive oil, salt and pepper in a 100 o oven 10 minutes. Add the vegetables to boiling water one by one – carrots, squash, beans, peppers and soya sprouts. Season them with the marinade of olive oil, salt and pepper. Cut the pineapple and mango in cubes. Sauté the fruit with the basil and coffee. Just before serving combine the milk and Turkish coffee and heat until it foams. Pour this over the sea bass roll.
