TURKISH COFFEE MACAROONS

Ingredients:

  • 30 gr. ground almond
  • 20 gr. powdered sugar
  • 2 egg whites
  • 1 tsp. water
  • 30 gr. sugar

Preparation:

  • Mix almond, sugar and 5 gr. egg white until a dough is formed.
  • Whip remaining egg white until foamy.
  • Boil sugar in the water to 116°C. Remove and little by little whisk in the beaten egg white. Whisk until cool.
  • Combine almond mixture with the egg whites and spread on baking sheets. Allow to set 10 minutes. Bake in a 170°C oven for 10 minutes.
  • While the macaroons are cooling, spread coffee cream between 2 halves and press them together.

Coffee Cream filling:

Ingredients:

  • 30 gr. cream
  • 3 gr. Turkish coffee
  • 5 gr. corn syrup
  • 20 gr. milk chocolate
  • 5 gr. butter

Preparation:

  • Combine cream, corn syrup, Turkish coffee and butter and bring to a boil.
  • Remove from heat, add chocolate and stir until fully mixed.
