SEA BASS TARTAR, TURKISH COFFEE LEMON PICKLE, AND CRISP CIABATTA BREAD SLICES

Ingredients:

  • 4 sea bass fillets 500-600 gr. each, deboned
  • Juice and grated rind of 2 lemons
  • 2 spoonfuls rice vinegar
  • 1 spoonful Turkish coffee
  • 2 stalks chives, sliced thinly
  • 1 Jalapeño chili pepper, sliced thinly
  • 2 stalks cilantro
  • 1/3 tsp. coriander crushed in a pestle
  • 10 thin slices oven-dried ciabatta bread

Preparation:

  • Cut sea bass into tiny cubes.
  • Place all remaining ingredients in a bowl and beat until thoroughly mixed.
  • Knead together the fish pieces with this sauce, spread on the crisp bread slices and serve.
